MEDITERRANEAN DIET AND LIFESTYLE WITH JOHNSON & WALES
For the third year, this coming Summer 11, APICIUS will host the Johnson & Wales Summer Program in Italy: Mediterranean Diet and Lifestyle.
The course offers an integrated curriculum incorporating theoretical and practical instructions on the art of Italian cooking. The course concentrates on the traditional elements, the regional perspective and the innovations in Italian cuisine. APICIUS offers a world of delights to those seeking baking and pastry secrets and culinary creations. The ingredients, creations, and styles of Italian culinary arts are the focus of this program. The history and warmth of Italy wrapped around the students as they participate in quality hands-on labs and area excursions. Traditional lectures and classroom presentations by experts in the area and work with fresh produce. A hands-on apprenticeship component - at the Apicius cultural association Ganzo offering fine meals to the public - is one of the highlights. The program ends with a lengthy, in-depth excursion to Sicily in the south.
