APICIUS PRESENTS THE ITALIAN RIVIERA AT THE JAMES BEARD FOUNDATION, OCTOBER 2011
Apicius’ seventh consecutive year of fall events in NYC will feature the Italian Riviera. Covering the coasts of Liguria and Northern Tuscany, the Italian Riviera has been visited by generations of Italians for its resorts, beautiful beaches, culture, and of course, gastronomy. The combination of surf and turf cuisines reflecting the mountainous and maritime features of the Riviera’s geography results in an extremely unique food culture.
Starting with a food demo at Macy’s in Herald Square, our team will present a multi-course meal and tasting. This will be followed by the food center of Astor Wine and Spirits, where an aperitivo-style presentation of Riviera dishes at buffet stations divided by courses and paired with Antinori Santa Cristina wines. Next up is our first event at the James Beard Foundation, a Riviera themed lunch at the former home of America’s culinary giant. To conclude the week of NYC events, a formal dinner at the James Beard Foundation will culminate in our team’s homage to one of Italy’s most fascinating and diverse areas.
The Apicius team will be made up of faculty members Andrea Trapani, Executive Chef; Wine Coordinator Camilla Carrega, and Sous/Pastry Chef Ilaria Fusi. They will supervise and collaborate with a team of students enrolled in the Apicius TuttoToscana program, which takes place in Florence for three weeks prior to the events and whose final project is hands-on staging of the events in NYC.
